4 medium sized fillet fish (any white fish)
3 cloves of crushed garlic
2 chinese eggplants, thinly sliced
1 red bell pepper, sliced
1 red onion, chopped
1 cup coconut milk
1 tbsp. chopped ginger root
1 tbsp. vinegar
Salt and pepper to taste
– Add fish, eggplant, red onion, red bell pepper, garlic, ginger, vinegar and simmer at low heat for 10 – 15 minutes.
– Season with salt and black pepper.
– Pour 1 cup of coconut milk and bring to boil for another 10 minutes.
– Serve hot with any side dish and vegetables.
