Low Carb Breakfast – Huevos Rancheros
Eggs, Chorizo, Salsa, Avocado….what’s not to love! This recipe you can get a little inventive with too if you like. Maybe instead of Chorizo use some bacon or breakfast sausage. Maybe some green chilis with the salsa. Sour cream would make a great topping too!

You will need some low carb tortillas for this recipe. If you can’t find them at your local grocery store you can order them on Amazon. I typically get these Mama Lupe ones, they are the best ones I have found.
Ingredients
- 1 low carb tortilla
- 3 oz Chorizo
- 1 oz Sharp Cheddar (grated)
- 2 tbsp green onion (diced)
- 2 tbsp orange peppers (diced)
- 2 tbsp roma tomatoes (diced)
- 2 eggs
- 1/4 avocado

Instructions
- Preheat over to 400 degrees.
- Crumble up your Chorizo in a cast iron or oven safe skillet. Of course remove the casing if there is any. Brown in a skillet until cooked through.
- Set Chorizo aside, can put on a paper towel if you want to soak up some of the grease. But leave the scraps in the skillet!
- Add tortilla to bottom of skillet and cover with the cheddar cheese.
- Add Chorizo, Roma tomatoes and orange peppers on top of the cheese covered tortilla.
- Crack eggs on top of everything. Try not to break the yolk 🙂
- Place skillet in over and cook until whites are done and yolks are still runny (or your preference). About 8 minutes or so depending on your oven.
