This is a very simple low carb chicken recipe with big taste! With only 1.8 grams of carbs total it will become one of your new favorites.

Ingredients
- 1 3lb Whole Chicken (organic / grass fed preferred)
- 1/4 Cup Extra Virgin Olive Oil
- 1/4 Cup Lemon Juice (freshly squeezed)
- 1 Small Bunch parsley (fresh)
- 2 Teaspoons Sea Salt

Instructions
- Preheat Oven to 350 degrees
- Rinse and dry chicken, then place Whole Chicken in a glass baking dish, breast side up.
- Mix olive oil, lemon juice, salt and parsley into a sauce. Can use a hand blender or food processor.
- Pour the sauce chicken covering all areas
- Bake for 1.5 hours basting with the juices every 30 minutes.
