These are a great low carb snack! Very high in fiber and low in carbs. They make a great replacement for trail mix.
Ingredients
- 3 cups edamame beans (shelled)
- 1 tbsp Extra Virgin Olive Oil
- 2 tsp curry powder
- 1 pinch salt and pepper
Servings: servings (1/2 cup)
Instructions
- Preheat over to 375 degrees.
- Toss edamame beans, curry powder, extra virgin olive oil, salt and pepper in a bowl and mix until beans are fully coated.
- Spread beans on a baking sheet.
- Roast in oven for 15 minutes.
